Ambrosia Breakfast Cookies

Ingredients

  • 2 cups Oatmeal
  • 1 cup Whole wheat flour
  • 1/2 cup Skim milk powder
  • 1/2 cup Ground flaxseed
  • 1 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/2 tsp. Ginger
  • 1/4 tsp. Cloves, ground
  • 1/2 cup Raisins (optional)
  • 1/2 cup Chopped almonds, toasted
  • 1 cup Butter
  • 2/3 cup Brown sugar
  • 2 Eggs
  • 1 tsp. Vanilla
  • 1/2 cup Milk
  • 2 cups Ambrosia Apples, unpeeled & grated

Directions

STEP 1
In a large bowl, combine first 11 dry ingredients. Set aside.

STEP 2
In a large mixing bowl, cream butter and sugar. Add eggs, vanilla and milk and mix well. Blend in Ambrosia apple.

STEP 3
Add dry ingredients to wet and blend well to combine.

STEP 4
On a baking sheet lined with parchment paper or sprayed with cooking oil spray, place about ¼ cup of cookie dough, allowing about 1 inch between cookies.

STEP 5
Bake at 180°F (350°C ) for 12 minutes. Transfer to cooling rack. Store in sealed container and use within 3 days, or freeze.
